damn lol well, let me ask your opinion on gingersnaps. everyone loves my gingersnaps i sell 5-10 orders a week usually (which is pretty good considering i do the orders online ) and basically, a couple people dont like that they dont 'snap' aka 'arent crunchy' i use more molassas because i wanted that effect, but they've asked me to make them crunchy outside but soft inside, how do you acheive that effect and not lose the taste of the cookie? (note: I use twice the ginger and twice the cinnamon than the recipe calls for and 1/4th more molassas which is why my cookie is different than storebought)

Hmm...I don't really have much experience with gingersnaps (only gingerbread, ginger kryscotti and ginger sugar cookies), but I would assume baking soda would achieve the crunch...or maybe you can roll the cookies in granulated sugar before you bake them. I'll check my old textbook to see if I can find anything later tonight.

My first encounter with a Boston crème pie at our hotel…I wasn’t too impressed. I could probably do better. =P
